I have a 2019 Tundra TRD double cab 4x4 and run 45 rear, 42 front with my ATC Panther Shell mounted. I still have my D rated OEM Michelins that have max pressure of 51lbs. and haven't felt the need to push it up to the limit. My Panther weighs in at 900 lbs dry and I doubt if I pack more than 200 lbs of food, water, cook ware, linens, etc. I drive mainly in the Ca foothills and High Sierra and have been satisfied with the ride and handling. Not sure what you mean by "rollover"?

What is total weight on front and rear axle fully loaded and what tires are you using?
My '05 Tundra AC SR5 at max+ GVW ['16 loaded Hawk] with Warn winch...Cooper AT3 / E rated...I use 60 psi..no problems on/off road or in snow/water.
No idea what a "rollover" is.
