I need to start the 110v wiring on my Granby shell. I was thinking about using stranded wire rather than romex so I would not have to worry about wire fatigue. Am I over thinking this and romex is fine? If I should use stranded any recommendation for a 12-2+ground stranded cable?

Stranded is definitely the way to go.  The issue with solid is not so much the wire, but the connections.  The stranded wire is also far easier to install and secure.   There is stranded 12/3 wire available for the marine applications, for example:

Electrically there's no real difference. Stranded wire will likely be easier to work with and route. In either case make sure you use a bushing or other material if you route through a panel or bulkhead to prevent the jacket from rubbing on a sharp or abrasive surface as the camper vibrates down the road.

There are differences in the use of wire (AC vs DC) but in our applications most of the differences are subtle.    Here is a link to a good reference:

Arguably, the most important consideration after choosing the appropriate wire size is the type of insulation on the wire and if it is appropriate for the application.

I bought a high quality outdoor rated 10 AWG extension cord and used that for the AC wiring in my build.

Also look at wire designed for welders, very heavy duty jacket and not cheap construction
