Welp, two pounds of red beans followed me home from Albertsons today, so I’m going to apply my Plaquemines version of the recipe. I won’t drown them beans, but mine does thicken up with a cup or two of them all mashed up. I’m also going to toss out the bay leaves, and add in a bunch of Tarantino’s breakfast links that are chopped into 1/2 inch segments. Seasonings will be salt, pepper, and a dash or two of Louisiana Hot Sauce.
Served over Basmati rice.

Bubbling away as I type. I normally use small red beans, so this was the first time I’ve used kidney beans… perhaps the last, it’s taking a long time to thoroughly cook the beans.
Edit: it turned out quite good.
