I love brisket but I've never had the guts or the knowledge to cook one.

Great info, especially on the trimming. I would have to take out a loan to buy a brisket that big!

Many years ago I tried "corning" a Brisket.It took a lot of time
but it turned out OK.
Wouldn't do it again,it's easier to buy one even with the 20 year loan.
