While cooking tonight’s dinner (home made chili) I turned the Wayback Machine dial back some 45 years to the days of the Umpteenth Annual Memorial Monday Malone Springs Marsh Muck with the old Southern Oregon canoeing gang. We would spend a long weekend exploring the upper Klamath marsh areas, consuming adult beverages (in moderation, mind you), and having a great time cooking good camp food over the antique Coleman stove.
I have to admit, that first paragraph is an overly long introduction to a simple and delicious camp meal. It’s truly simple… brown up some hamburger along with onions, celery, then throw in a can or two of your favorite pork and beans. Season as you see fit. That friends is all there is to Marsh Muck. It’s the fuel you need to muck about the marsh in an old downeast canoe.
