I'm getting my camper all dialed in and thought I would post some pics. The table stand is a bicycle repair stand that I can pull out and mount on outside of camper to work on bikes. It has a ton of adjustability and is very sturdy. All the milk crates are easily removable so we can fine tune our storage needs based on the trip.

Hi August, I did something very similar to what you've done.  Originally, I too was going to use milk crates for their practicality and easy removal when not being used.  As I did my build (http://www.wanderthe...y-bobcat-build/), however, I went with larger bins and they work great as I'm sure yours will.

Look forward to more build pics...
